I love buffalo sauce EVERYTHING, so when I came across Juli Bauer’s slow cooker buffalo chicken chili, I had to make it immediately. It did not disappoint, a touch of spicy and oh so yummy. I try to eat paleo about 90% of the time so when I find good recipes, I have to share. I promise you won’t even notice there are no beans in this chili! The very best thing about this recipe {besides its deliciousness} is just how ridiculously  easy it is to make. So simple!

Even if you don’t eat paleo, I still recommend trying this recipe because it’s incredibly delicious and so EASY.

Literally, you throw everything into a slow cooker and walk away. No browning the meat before hand or anything like that! SUPER easy. Feel free to substitute the ground chicken for ground turkey, I have done that before and it was just as amazing.

Tip for Trader Joe’s shoppers:

If you want to avoid having to chop the celery, onion and carrot, pick up a pre cut mirepoix next time you are at TJ’s so you can just toss that right into the slow cooker. Also, Trader Joe’s now sells peeled and diced sweet potatoes in their refrigerated section! No chopping necessary, you are welcome!

Servings: 4-5

Ingredients

  • 1 pound ground chicken
  • 1 sweet potato, peeled and diced
  • 2 carrots, peeled and diced
  • 2 stalks of celery, diced
  • 1 yellow onion, diced
  • 2 garlic cloves, minced
  • 1 teaspoon chili powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 1 cup tomato sauce
  • 1 cup diced tomatoes (canned, not drained)
  • ½ cup buffalo sauce (I used Frank’s Red Hot Buffalo Sauce)
  • ½ cup broth (I used organic chicken broth)

For garnish (not all paleo)

  • ranch dressing
  • sliced fresno peppers or jalapeno
  • sliced green onions
  • fresh lime wedges
  • cilantro
  • tortilla or plantain chips
  • cheese
  • avocado

Instructions

  1. Place all ingredients in a slow cooker (except for the garnishes) and mix together until combined. (no, you do not need to brown the meat beforehand)
  2. Cover and cook for 8 hours on low OR 4 hours on high. Once cooked through, mix once more to combine everything.
  3. Garnish with any of the above toppings.
  4. ENJOY!
